Cake
1. Preheat the oven to 200.
2. Whisk together the egg yolks, 15g sugar, milk, sifted flour, and salt. Beat the mixture until smooth and light yellow.

3. In a separate bowl, beat the egg whites (with clean beaters) until bubbles form (像洗碗精), gradually add 1/2 of the 35g sugar.
Continue to beat until foamy (no small bubbles, 像洗面乳) and add 1/4 sugar.
Beat until foamy and smooth and add the remaining sugar, then beat 2-3 minutes or more until stiff peaks form.

4. While beating the egg whites, melt the butter in another bowl, and stir in the cocoa powder, stir until smooth.
5. Gradually fold 1/3 of the egg white mixture into the egg yolk mixture.
6. Gradually fold the mixture from step 5 into the remaining egg white mixture.
7. Add the melted cocoa butter mixture into the mixture from step 6, stir until smooth. (Do not stir too long)
8. Place the baking sheet on the baking pan, and pour in the mixture. Bake for 10 minutes.
Filling
1. Beat the heavy cream and sugar until stiff peaks form.
2. Put into fridge.
Assembling
1. Take out the cake from the oven, peel off the baking sheet (fast, or else it will stick).
2. Place the cake on the second baking sheet.
3. Allow the cake to cool. (Or the filling will melt in step 3)
4. Spread the filling over the cake.
5. Roll the cake, use the baking sheet to make it tight.
6. Trim the cake and put into fridge.
Coating
1. Bring the whipping cream and butter to boil.
2. Pour the mixture into the chocolate, let the chocolate immerse in it for 3-4 minutes. DO NOT STIR.
3. Quickly stir the chocolate until smooth, do not use electronic mixer.
4. Take out the cake, pour the chocolate onto the cake.
5. Make sure the cake is fully covered with chocolate, put into fridge.
6. Take out the cake when the chocolate becomes medium hard, and carve the wood pattern with forks or knifes.
7. Dusted the powder sugar on the cake.
